A lovely day for a Guinness & Chocolate Ice Cream

300ml Guinness
2 cups whipped cream
2 cups milk
3/4 cup sugar
1 teaspoon of vanilla
6 egg yolks
250g Dark Chocolate

Want a rich and luscious desert for your next dinner party, why not try Guinness Chocolate Ice Cream it is sensational and easy to prepare. In a large saucepan simmer the Guinness until it reduces to about 2/3 then stir in the sugar and dissolve, let cool a little then add the vanilla. In double saucepan or in the microwave melt the chocolate and then beat in the eggs then fold in the cream followed by the milk. Beat into the warm Guinness mixture and raise the heat beating vigorously until just under boil. Let cool a little and pour into a bowl and freeze for about 2 hours until firm but not hard. Cut into small pieces with a knife then beat again before refreezing. This ice cream is beautiful served with fresh strawberries.
